Production Method

To produce each spoon involves 10 steps:

1. Material Cutting - the metal plate is cut according to the size of the spoon
2. Jinuki - the basic shape of the spoon is completed by using a metal base die
3. Roll - widening and thinning to lighten the part that goes into the mouth
4. Hankiri - the process of punching out the shape of the spoon head’s outline using a half-cut mold
5. Eoshi - an Eoshigata mold is used to transfer the patterns and changes in thickness to the handle of the spoon
6. Raise the pressure points - the process of giving a rounded bulge to a spoon
7. Polishing - the process of removing excess metal that protrudes (known as “burrs”)
8. Automatic Polishing - spoons are automatically polished with a fine file cloth known as a buff in an automatic polishing machine
9. Cleaning - spoon is washed to remove any dirt
10. Inspection - each washed spoon is visually inspected by experienced workers, any imperfections will be sent back to the polishing process

Matcha is an antioxidant powerhouse. On the ORAC scale (oxygen radical absorbance capacity – a measure of the antioxidant capacity of food), it surpasses all other antioxidant-rich foods including blueberries, pomegranates, and dark chocolate.

The antioxidants in matcha are made up of 60% catechin polyphenols – the most potent antioxidant. Catechins offer protection against many kinds of cancer, helping to prevent heart disease, reduce cholesterol, and slow the process of aging. The most important and abundant polyphenol in matcha is EGCG (epigallocatechin gallate) – the same polyphenol found in all green teas.
