About the Farm

Our single origin matcha is sourced from a sustainable, fourth-generation family farm located in the Shizuoka Prefecture of Japan. Matcha grows through the winter and is traditionally shaded for the final 3-4 weeks of growth. Innovatively, this farm uses solar panels to provide the necessary shade that, in turn, generate power for nearby towns. The plants are grown without pesticides and fertilized using organic compost from the local community, thereby maintaining a closed-loop system. Our matcha from this farm is stone-ground to order in small batches for optimal freshness.

How to Prepare

Step 1: Sift 0.5 - 1.5 tsp (to strength preference) of matcha into whisking bowl

Step 2: Add 2 oz of water heated to 170°F

Step 3: Using bamboo whisk, whisk vigorously in a zig-zag pattern until all clumps dissolve and a nice froth is achieved

Step 4 (for americano): combine whisked matcha with 6 oz of hot water Step 4 (for latte): combine whisked matcha with 6 oz of warm or cold milk Step 5: Sip soundly and enjoy!

POWERFUL ANTIOXIDANTS

Matcha is an antioxidant powerhouse. On the ORAC scale (oxygen radical absorbance capacity – a measure of the antioxidant capacity of food), it surpasses all other antioxidant-rich foods including blueberries, pomegranates, and dark chocolate.

The antioxidants in matcha are made up of 60% catechin polyphenols – the most potent antioxidant. Catechins offer protection against many kinds of cancer, helping to prevent heart disease, reduce cholesterol, and slow the process of aging. The most important and abundant polyphenol in matcha is EGCG (epigallocatechin gallate) – the same polyphenol found in all green teas.

L-Theanine, an amino acid found in matcha, combines with caffeine to create increased focused and sustained energy throughout the day. L-Theanine has been hailed for relaxing the brain, muscles, and blood vessels.
